Lola's Leche Flan

I can't believe I never tried this sooner in my life. When you're spoiled by never having to make it, you just eat it and never learn to make it. Finally, I asked my mom for her recipe and was shocked over how easy it was to make. Take this Filipino leche flan recipe and make it your own. That's what I love about sharing recipes — they're made to be personalized and shared.
Ingredients
  • 1 can evaporated milk
  • 1 can condense milk
  • 10 egg yolks
  • 1 tsp vanilla extract
  • 1 cup sugar
  • ¼ cup water   

Method
  1. Mix sugar and water then bring to a boil for a few minutes until the sugar caramelizes. Pour caramelized sugar into an aluminum container or heat-safe dish, spreading the caramel at the bottom.  
  2. Gently mix the evaporated milk, condensed milk, egg yolks, and vanilla. Gently pour the mixture through a strainer over the caramel (this helps to get rid of the bubbles). Cover with aluminum foil then steam for about 30 minutes. Stick with a toothpick and if it comes out clean, it's done. Otherwise steam for another 10 minutes.
  3. Let chill at room temperature or in the fridge. Bring out of the fridge for 30-45 minutes just before serving.
