I eat far less pork than I used to before. I used to eat it every week until I watched Food Inc. Now, I only eat it once a month when I bother to spend a pretty penny at Prather Ranch Meat for a humanely-raised slab of pork belly. But, this blog isn't about my porky ethics. I'm living in the moment writing this blog and pork is oh so delicious—let me count the ways. Pork marries well with peppers! Pork is divine with Pinot! Pork is always heavenly as bacon. Pork belly is one of life's finer pleasures to be enjoyed in moderation.

Why is Kungpao Chicken Easy to Make?

You may have eaten a few varieties of Kungpao Chicken (Gong Bao Ji Ding in Mandarin). Or maybe you've eaten only the one served at Panda Express. Quite possibly, you've never had it before because there's never been one around. Good news! You can make it yourself because it's easy.

Why is Kungpao chicken easy?Because it uses very few main ingredients with a smattering of essential sauces. You've got to have the chicken, chili bean paste, garlic, green onion, chili peppers, Sichuan peppercorns, Shaoxing wine, soy sauce, vinegar, sugar, and roasted peanuts. Okay, that sounds like a lot, but once you start cooking Chinese food you'll have your pantry stocked with soy sauce, Shaoxing wine, chilis and a few other spices. You'll find yourself using different combinations of the sauces and spices as you stir-fry other easy Chinese recipes.

While there are many variations, here's a super easy Kungpao chicken for you to try. I've linked some of the ingredients to where you can buy them on Amazon for your reference to buy them locally or online if they're not available where you're at. Chengdu, Sichuan, China—From morning into the early evening, I was on my heels learning nine favorite family recipes. From crayfish to wriggling eels, I learned simple dishes and complex dishes. Jiǎng Yì (蒋毅) and his sister Jiǎng Lì (蒋利) proudly shared a feast of their family favorites. Not all of their dishes were easy to cook, but we learned those tricky ones too just in case any food explorers feel up for the challenge.
